Well on an dc motor all you have to do is change the polarity of the input voltage and on a ac single phase you’d switch the starter winding leads and in a ac 3 phase you’d switch one leg of the input power.

If the wiring caught fire it was probably a bad fuze or the absence of the fuze. There should be a big in-line fuze (50 amps or so) in the wiring bundle near the engine. If you have the fuze and it still burned check the amperage of the fuze.
