Here are a couple ideas:  Instead of a big night on the town, do a dessert night or ice cream sundae night at home.  Plan something extravagant like a dessert you'd never buy or make at any other time, or huge ice cream sundaes with all the toppings.  Or do an indoor wine and cheese picnic by the fire.
