Too many tomatoes

About: ripe home grown green tomatoes

I have cooked spaghetti and chili using the ripe tomatoes. The taste is naste, bitter leaving an acid taste in the mouth. I could use some input to what is causing the problem. Yes, I use sugar in the sauce! What now. . . ?
