If I file for separation in North Carolina and meet with a mediator there, but then move to Texas, can I file for divorce in Texas after establishing residency?

I think you need to be residing in the new state for at least 6 or 12 months before you can file for divorce. But I would suggest contacting a divorce attorney to find out for sure. You can find one through the American Academy of Matrimonial Lawyers's website. Good luck.

SUBTITLE C. DISSOLUTION OF MARRIAGE
CHAPTER 6. SUIT FOR DISSOLUTION OF MARRIAGE
SUBCHAPTER D. JURISDICTION, VENUE, AND RESIDENCE QUALIFICATIONS

6.301.  GENERAL RESIDENCY RULE FOR DIVORCE SUIT.  A suit for divorce may not be maintained in this state unless at the time the suit is filed either the petitioner or the respondent has been:
(1)  a domiciliary of this state for the preceding six-month period;  and   
(2)  a resident of the county in which the suit is filed for the preceding 90-day period.
