Can the skins of my stuffed eggplant be eaten?

Yes the skin of an eggplant can be eaten as long as it's cooked thoroughly and tender.

yes the skin of an eggplant can be eaten just like a potato... first wash then cook. the skin tends to be a little on the bitter side. when I make eggplant parmesan I first cut off the skin then slice and fry then put the cheese and sauce in layers and bake till cheese is melted...  my mothe always said to take the skins off to get the bitterness out of it... some old timers use to put a weight on the slices over night to press out the extra moistness... when picking an eggplant look at bottom and look for a small circle... the small circle is the male plant and has less seeds the larger circles are the female plant and tend to have more seeds in them and less meat.
