Just like it's not the best idea to refreeze thawed meat/chicken, I am pretty sure refreezing thawed cheese is not so great as well. It will definitely take away from the freshness, and may create a freezerburn taste as well.

Yes you can freeze it, but it may taste slightly different when it thaws.
