If you are making a chunky marmalade.,what kind of ingredients are you putting in it that make it chunky? If it calls for ginger I would think you could use thinly julienned slivers of sugar blanched and ice water shocked fresh ginger. I'm going to check into my archives and see what else there might be on the topic. You might release what the chunky ingredients are without releasing the recipe. It would help.
