I like starting this recipe by studding the pork with cloves of raw garlic. Cut small slits in the raw meat, and push whole cloves of raw garlic into them at random intervals. Use olive oil and coat the entire piece of meat. Then roughly cut some fresh herbs, I like rosemary, thyme, oregano for this. Use enough to make a thin covering on the meat, add some fresh cracked black pepper and some Kosher salt or Sea salt if you have sodium issues. Lay the roast into a baking pan, along with a bit of oil to prevent sticking and help with clean up later. Add some white cooking wine, this will help soften the meat dureing cooking. If you like, include some root vegetables in the same pan. Carrots, red potatoes, onions, celery, all cut into small pieces of roughly bite size. Add some chicken stock, or water into the pan, about enough to make the pan 1/2" inch full of liquid. Cover the pan with foil and seal it tightly. Set your oven at 400 degrees. Figure about 15 minutes per pound of meat. You can also do this in a crock pot slow cooker and make a really good roast in 4-6 hours with the same recipe.

Actually pork roast is one of the simplest to do.  I don't use any liquid and very little seasoning.  I use some garlic powder - a little salt and pepper - and no broth or water.  I just cover it with foil and roast (sometimes I start it in a 350 degree oven to brown - which makes more flavor for the gravy - then I turn it down to about 325 to finish.    (How long depends on the size).  I find that they are done when they fall apart and/or are very tender.  They tend to deposit lots of liquid and/or fat which makes wonderful gravy.  To this I sometimes add a little Kitchen Bouquet and if needed a little chicken broth.  So-o-o-o   good!

I ALWAYS do my pork roast in the crock pot. It keeps it moist and tender and delicious. If you want it a bit sweet.. use brown sugar and worchestershire sauce - if you want it bbq - use your favorite bbq sauce. If you want plain ole yummy roast..just use salt and pepper and some spices.  Can't go wrong in a crock pot.

Ingredients

  • 2 pounds boneless center-cut pork loin
  • 4 cloves garlic, peeled and crushed
  • 2 teaspoons coarse salt
  • 1 tablespoon minced fresh sage
  • 2 teaspoons minced fresh rosemary leaves
  • 3/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Directions

  1. Heat oven to 450 degrees F. Pat pork dry with paper towels, place in shallow roasting pan. In small bowl, stir together garlic, salt, sage, rosemary, pepper and olive oil to make a paste. Rub garlic paste over all surfaces of pork loin; place in oven, roast for 15 minutes.
  2. Turn oven temperature down to 300 degrees F., roast for 15-20 minutes, take internal temperature using an instant-read thermometer. When internal temperature of roast is 150 degrees F., remove from oven, tent loosely with foil and let rest 10 minutes before slicing to serve.

  • 2/3 cup packed light brown sugar
  • 1/4 cup cinnamon applesauce
  • 1 1/2 teaspoons ground ginger
  • 2 pounds boneless pork loin roast

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Lightly flour an oven bag.
  2. In a small bowl, blend brown sugar, applesauce, and ginger.
  3. Place pork roast in the prepared oven bag. Pour the brown sugar mixture over the roast. Seal bag, and cut several small slits in the top.
  4. Cook the roast 1 hour in the preheated oven, or until the internal temperature has reached 160 degrees F (70 degrees C).
