Sounds like you ripped out your old tub and replaced it with a new, taller one.  Well, you ripped out your tile too I'm guessing so that needs to be replaced.  Now, you should replace the valve and tub spout.  The water lines feeding the hot and cold water need to be shorter (assuming they come from above).  Quite a job if you have no experience in plumbing. Sometimes you just have to hire a Pro.
