We recently adopted a stray kitten who is cute as a button.  I do not know what the mother or father look like.  How can I tell if/when my kitten/cat will have long hair?  She has some patches of white hair that seem longer than her black hair. At what age do they start getting longer hair?

Usually by three months you can be pretty sure her hair will be either short or long. The signs when they're really tiny can be confusing, but you can have a pretty fair estimate whether the hair will be fine or coarse.

One of my cats was found when she was only a few days old, and she looked like a pom-pom ball, but when she got older the hair turned out to be only medium length.
