What happened to Oregon Farms Carrot Cake? I used to be able to find it at the grocery store in the frozen section, but no luck lately...???
Oregon farms made a great carrot cake indeed. That was intil the new Mrs Smiths bought them. Mrs Smiths used to make the best pies. I live near Pottstown where they used to be head quartered and their pies were world renowned.
Kellog Foods bought the company in the mid 70's then here is a quote from the Mrs Smiths website ();
"MRS. SMITH'S® Bakeries, Inc. was purchased by The Schwan Food Company in 2003, and is now part of the privately owned, multi-billion dollar frozen food leader. The world leader in frozen desserts, pizza, egg rolls and home service, The Schwan Food Company is headquartered in Marshall, Minnesota."
They used to use fresh local produce from the area unitl they moved pie production down south somewhere ( i think) who know where and i suspect they moved the carrot cake production as well.
The qulaity was never the same. I suspect the quality we were used to became a private jet for a corporate executive or something like that. I assume many others stopped buiying when they noticed the quality was poor and then the compnay stopped production and distribution.
The good things often go away in this world.
When Oregon Farms Carrot cake disappeared here in NY, it was quickly replaced by the same recipe in the same design box, but I believe the name was changed to Mrs Smiths, then again Edwards. I was looking for it this weekend, and can't seem to find that one now either. However the supermarket was not very well stocked, so it might still be around. A Google search found that Mrs. Smiths an Edwards are owned by the same company, so that explains a bit.
I, too, enjoyed Oregon Farms Carrot Cake. I like it when I was too lazy to make one myself. Have always looked for it but now I know it is gone. This is a reciepe that is even better...if you can believe it. I have used it for over 25 years. Hope you find it just as good....
Cream Cheese Supreme Frosting
2 1/2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon salt
2 cups sugar
1 cup oil
2 teaspoons vanilla
2 cups shredded carrots
8 1/4 oz can crushed pineapple, drained
½ cup raisins
½ cup chopped walnuts
Cream Cheese Supreme Frosting:(BEST EVER)
2 8 oz pkg cram cheese, softened
5 cups powdered sugar
12 tablespoons butter, softened
2 teaspoons vanilla
2 cup chopped fine walnuts
Preheat oven, 350.
Grease & flour 13 x 9 pan. In large bowl add sugar, oil, vanilla & eggs, beat well. Stir in flour, soda, cinnamon & salt, mix well. Stir in carrots, pineapple, raisins & nuts, mix well. Add a little bit of milk if very thick.
Bake for 50 to 60 minutes or until cake springs back when touched lightly in center. Cool completely.
In medium bowl, combine cream cheese, powdered sugar, butter and vanilla, beat well until smooth. Stir in nuts. Add 1 cup coconut also for a twist! Spread over cooled cake.
Also makes wonderful cupcakes! Adjust baking time...golden brown and toothpick comes out clean when inserted in middle of cupcake.
