Will real Maple syrup become a thing of the past?
No way. Maples grow fast and when you cut them the stumps come back with a vengeance. Vine maples of all species can take over like forest thugs.

Then why the heck is maple syrup so dog gone expensive?
I think maple syrup is so expensive because of the long process and the length of time to reduce the water content. I have done it. If I remember right reduction of 12 or 14 gallons of what is extracted from the tree yields approximately maybe between I and 2 gallons of syrup.
Also,if you noticed the weird winter this year---the weather got too warm too fast--to make maple sap flow you need warm days and cold nights. It made the season way shorter than normal this year because the nights were too warm. Nothing wrong with the trees, just the abnormally high temperatures.
