What's the origin of the name "Jerusalem artichokes"? I understand they come form America and not the middle east.

You're correct, they originate in America, and they're not artichokes. They are a type of sunflower. At some point they were introduced into Italy, where they were called "girasol" which is the Italian name for sunflowers (gira meaning turn and sol meaning sun). At some point, the name was corrupted to become jerusalem, and someone decided that the taste is similar to artichokes so they became Jerusalem artichokes

The Jerusalem artichoke (Helianthus tuberosus), also called the sunroot or sunchoke or earth apple or topinambur, is a species of sunflower native to the eastern United States, from Maine west to North Dakota, and south to northern Florida and Texas. It is also cultivated widely across the temperate zone for its tuber, which is used as a root vegetable.
