Herb gardens?

It would be great to grow your own herb. Do you have a herb garden? If so, how do you process herbs from the garden? Do you consume them fresh or dried?

We use our herbs both fresh and then once winter sets in we use dried.  Well for most things.  I still cut fresh rosemary and thyme during the winter.  Most everything else either dies off or goes dormant during the winters here in southeastern PA.

You can use the herbs from your garden either fresh or dried, depending on your needs.  There's nothing like a sprig of fresh basil to spruce up a bowl of salad or soup, and during the dark days of winter, dried oregano or thyme can remind you of the sunshine that helped the leaves grow.

Medicinal gardens are very pretty if you do them right.  All of these plants take different soil conditions and different amounts of sun.  Mints and relatives like wet, high nitrogen soil and will grow best if you mix in well cured manure and plant cuttings in early spring, ideally on a new moon preceding Vernal Equinox. 

Mints are the easiest to grow and the most encouraging for a new medicinal gardener.  Next, plant roses for rose hips (potent source of ascorbic acid).  After that, plant roots (fenugreek, etc) at the new moon preceding Summer Solstice. 

Equinox plants give us rest and solstice plants give us sustained energy: this balances the forces of nature and brings us to a cheery state of mind.
