Ok basic statement: The faster you swing the stiffer the shaft you need.

If you don't want to get a fitting you should really be able to determine shaft flex on the feel when you hit the club. Especially for irons, you don't want the club to seem too flimsy when you swing and on the reverse side you don't want to feel like you are swinging a medal rod.

Also, irons are about control. The more bend you have in your shaft the more the club is going to flex and whip through, transferring energy to the ball. This will help increase distance but, especially for higher swing speeds, the club can twist and contort throwing off accuracy. Generally the stiffer the shaft the more accuracy you gain, but that being said, if you don't have high enough swing speed and you have too stiff a shaft, it won't flex at all and you don't want that.

When you try out your clubs, swing different shaft flexes and pick which one feels best for you. It would also be a good idea to be able to see your full ball flight and make sure that you are getting consistent results. Too much flex in the shaft can lead to inaccuracy in all different directions.

I leave you with this final thought. People like to turn getting fitted for clubs into an exact science when in reality golf is an inexact game. You are the one that has to stand over the ball with that club in your hand and feel comfortable and confident that are you going to hit the ball where you want it to go. That is why I personally feel that no matter what swing analysis machines tell you about swing speed and ball spin, you should ultimately pick the club that feels best to you.
