Are you asking about cars, or bicycles?  Three speeds used to be standard for bicycles, then 10 speeds, but for long distances and mountain climbs it now seems like 15 speeds are required, and there are 21-speed and 27-speed models.  I don't think having 3x7 speeds is going to have more problems than 2x5; you have the same number of hubs, just more intermediate gears.
