Boat tops aren't very difficult if you have a 3-wheel tubing bender and the right hardware to attach the bows once you make them.  The trick is to make sure everything folds back over the transom, all the zippers line up, and everything lays relatively flat.  After that set the bows on spring tying twine, get everything lined up, and sew the panels with all the seams "trailing."

It is an "inside shop" job with small boats but boats over 20' tend to be a lot higher than most shop ceilings, so you will find yourself doing them outside.

Just make sure all the snaps and turn grommets line up tightly.
