You may be making your forsting a little too firm. To it a little softer.

Your frosting may be too firm. Start out with it softer. It will firm up as it sets. Also, you might try using a frosting knife. Those are very flexible broad blade knives designed specifically for frosting

Bonestructure is on the right path.  If you are using canned icing, put it in a bowl and whip it with a mixer.  That will make it fluffier and less likely to peel the skin off the cake.

I'd agree with you, but then we'd both be wrong.
