With all the farms the USDA has to inspect how do you truly know that food is organic? I heard things that were found out about one so called organic soy milk brand so how do I know if the rest aren't trying to get away with things?

If you want to be absolutely sure, grow your own.  If you want to be reasonably sure, buy it from a local farmer you know and trust.
