You have to make sure the wine you are using is less dense than the liquor your floating it on, otherwise it will sink to the bottom!  In general, wine has a density (winemakers call it specific gravity) that is only slightly more than that of water, and most liqueurs and mixers will be more dense that that.  Google liquer density chart to see the most common liquer densities.  Pick a mixer with a high density and your layered drink should come out right.  Good luck!
