A very tricky question. My answer is very much mood-dependent. I'd say that for me the top three are:

1. The Beatles - Abbey Road

2. The Beatles - Sgt. Pepper's Lonely Hearts Club Band 

3. Red Hot Chili Peppers - Blood, Sugar, Sex, Magik
