The expression

The expression "Life is what happens when you're making other plans." Do you pay any attention to it? It implies that you can never do what you want.

I don't see it as being so severe, and I think it's more about working around obstacles than being defeated by them.  You have to be adaptable, and go with the flow.  In the "When life gives you lemons, make lemonade" vein.

I'd agree with you, but then we'd both be wrong.

I take it to mean that it is not about the destination, enjoy the journey too.  Of course you can do what you want, but the process is your life - you should enjoy that and learn from it too.

I think it means not to take your life so seriously and to live it to the hilt as freely as possible.
