Espresso with soda

why is it that people always take espressos with soda water? what's in the combination there? why not just water?

I know many people who drink espresso but none that drink it with soda water.

I have read that they offer soda water in Spain and that it cleanses the palate to increase the coffee enjoyment.

Whatever floats your boat, I suppose.
