What are the adverse effects of eating a piece of cooked 3 week old ham? This ham not being refrigerated.

It was a ham shoulder, not sure what kind....pink(?) I am assuming it was very tough, no discoloration or mold though. What sorts of possible harmful effects can happen in general? Can it cause any parasite or would one simply get food posioning at the worste?
