I  need  to get new earphones for my ipod, and I can't decide if I should get the earbud type (that fit into the ear) or the type that cover the whole ear. I'd be interested to hear what people recommend, and why

I recommend the type that fit over the ear (not cover the ear like ear muffs...im sure you know what im talking about but i wanna make sure).that's what i use and they're amazing.i jog with my ipod every morning and my headphones never slip.with earbuds they were always falling off.i think mine were made by sony and they only cost about $10 at Wal-Mart.

MY inferiority complex isn't as good as YOURS

I would recommend the in-ear earbuds. I actually have tried both and have found that I get alot more musical information with the in ear type. Having said that, many people simple do not like the sensation of having the tips inserted into the ear. The trick is to find a set that come with an assortment of tips so you can optimize the fit to you anatomy. Also it depend on how much external noise you want to filter out. I have found the inner ear variety do a better job of filtering out the ambient noise. Here's a site that reviews some of the best earbuds available.

If the "line out" jack is the kind that uses an RCA (ususally one red, one white) jack, you can purchase an inexpensive adaptor at Radio Shack which will have the RCA "male" red and white jacks at one end and a female mini headphone jack at the other end. You can then listen through headphones.

Budding as new

I'm not quite sure what you're asking, but the word "budding" as it regards "new" relates to rebirth or growth. As an example, picture what happens to flowering trees after a long winter ~ the new growth of soon-to-be-flowers is called buds. Hence, "budding" as connected to "new."
