I am curious if a sink trap has to be directly beneath the sink. In my kitchen, the plumbing runs up through a corner cabinet, and over to the sink. Is it possible to change the drain so the trap part is also in the corner cabinet rather than directly under the sink? This would enable me to make better use of the space beneath the sink.

No, the trap does not have to be directly beneath the sink.  You should be sure to maintain the proper slope on the pipe (1/4 inch per foot), and make sure that the trap will still be accessible afterwards (in case you need to take it apart for cleaning or repair).
