If you leave money or property to your son, he can give it to her or leave it to her.  The only way you can prevent it is to set up a trust that, for example, leaves him the income for life (perhaps allowing withdrawals for medical expenses or long term care) and then distributes the remainder to his children, or charity.

If this was an episode of Law and Order, you'd probably hire some thug to kill her and make it look like an accident. But he'd screw it up and leave evidence and then have to turn state's evidence against you and the show would end with you being taken away in handcuffs.

So don't do that.
