My cucumber plants were doing beautiful and this morning when I looked there isnt a single leaf left on the plant it was stripped bear what animal could have done this? and how to prevent any future problems

My guess is the cucumber bettle... Time for some insecticide..

been there wish I'd done that

I don't think you can. Bitter cucumbers are late in the season and should not reach the shops but some places don't have effective quality control. In season cucumbers should not be bitter.
