I haven't thought of lumpia for years. But now that you bring it up my mouth is watering. These have to be my favorite style of eggrolls.

My first wife was Filipino and used to make them all the time and even gave me her recipe.

For those that don't know what lumpia is, it is a meat filled eggroll favored by the Filipino people. They can be filled with beef, pork, shrimp or crab with pork being my favorite in these.

Here is the recipe I have used and will be using to make lumpia soon.

1 Pound Ground Pork

1/2 Cup Waterchestnuts -- chopped
2 Large Scallion -- finely chopped
1 Teaspoon Salt
1 Teaspoon Pepper
1 Large Egg
1 Tablespoon Soy Sauce
1 Package Egg Roll Skins
1/2 Cup Oil -- for frying

Combine pork,  water chestnuts, green onion, egg and soy sauce. Season with salt and pepper. Place a tablespoon of filling on each egg roll wrapper and seal with a few drops of water. Deep fry in the oil for 2 minutes and drain on paper towels. Serve with soy sauce or sweet and sour sauce.

Send a couple my way when  you are finished making them :)

Cooking safety

You can't leave any hot food in a bowl on a table for 4 hours. Doesn't matter if it's dressing, turkey, steak, chicken, pork or whatever. 2 hours maximium, and preferably less. That's basic food safety 101. That dressing could have killed someone. I hope you didn't serve or eat it.
