Hi Dave, Happy Thanksgiving!

Probably the easiest way is to bake it.  I am presuming you are doing this for pie, and not just to eat like you would acorn squash.  Cut the pumpkin (remove seeds) into smaller , approximately three by four inch pieces, put in a baking pan with about a half an inch of water. Cover with aluminum foil, and bake at 350 degrees for an hour, or until tender.  Scrape meat off of skin, and drain if watery.  It is then ready to mash to be used as pie.

I can my own pumpkin for pies etc. I clean the pumpkin and bake it in my oven.  When it is done, I pack it into sterile jars and can it according to the LARGE PRESSURE COOKER instructions.
