Hi Curtis, I am a little confused by how to cover the turkey with foil during cooking. In your video, you cover the entire pan with foil, yet in the printed recipe it calls for only covering the breast. Can you tell me which method would be best?

Jan, sometime these cooks surprise me that they are able to get out of bed without help in the morning.This isn't Curtis, but they never see these that I know of.They leave us to straighten up the misconceptions that they create on their cooking shows. What you are suppose to do is cover the breast with a tent made of tin foil because the breast cooks quicker than the rest of the turkey.This is to keep it from cooking too quick and drying out. I had to laugh when you said he covered the whole pan. He is not really what I would consider a bonifide chef. Happy cooking.Hope this was clearer than the mud you had to look through before.
