Should you cover casseroles, meats, etc when cooking in the oven?

Covering an item in the oven will confine the heat and moisture; the meat will be more done throughout and more juicy/tender.  If you wish the casserole to be crisp and browned on top, it should be left uncovered.

I'd agree with you, but then we'd both be wrong.

The answer is, it depends.

Some recipes will require covering all the way through, some won't.

For instance, my roast turkey gets covered with a piece of cheesecloth which has been soaked in butter and olive oil. My macaroni and cheese, on the other hand, bakes uncovered. Roast pork loin with grapes is covered all the way through, but Sunshine chicken is uncovered for the last half of the cooking time.

My best suggestion is to follow the recipe and/or to do a little experimenting until you determine what you prefer.
