This is a very light very refreshing recipe. I like the fruity flavors and the tart "bite" the fruits add to the flavors. There are more filling recipes, including rice or pasta, but I wouldn't add pasta to this specific recipe because it will dull the result. Ingredients: 1 c Chopped cooked chicken 1/4 c Chopped celery 1/4 c Seedless red grapes,halved 1/4 c Canned pineapple tidbits, drained 3 tb Purchased tuna salad dressing 2 Leaves leaf lettuce 1/4 Cantaloupe, seeded, peeled, cut in thin wedges 2 tb Cashews Directions: Step 1: In medium bowl, combine chicken, celery, grapes and pineapple. Add dressing; stir gently to coat. Step 2: Place lettuce leaf on each individual serving plate. Arrange cantaloupe wedges over lettuce, creating fan shape.
