Yes, it works well to keep them in a bowl of water in the refrigerator for up to 2 days.
After you peel them... soak them in a mixture of fresh lemon juice & water untill ready to use. They must be completely covered. Three fresh lemonds per 10 to 15 potatoes. You can cut up some of the lemons after you squeeze them & add to the water mixture. Keep everything cold.

Place the potatoes in a bowl and cover with water. Cover bowl with plastic wrap and place in the refrigerator and chill until needed.

Simply cover with COLD water and add about a tablespoon of vinegar to the water, keep in a cool or dark place, when you are ready to cook them drain the water out and add more cold water, then add salt to the water & cook.
