Immersing them in cold water is what I always do - it keeps them from turning brown as well.  Good luck!

What comes around goes around.

Yes, it works well to keep them in a bowl of water in the refrigerator for up to 2 days.

After you peel them... soak them in a mixture of fresh lemon juice & water untill ready to use. They must be completely covered. Three fresh lemonds per 10 to 15 potatoes. You can cut up some of the lemons after you squeeze them & add to the water mixture. Keep everything cold.

Place the potatoes in a bowl and cover with water. Cover bowl with plastic wrap and place in the refrigerator and chill until needed.

You can keep them submerged in cold water until ready to use

Icy cold water slightly salted.  Works for Belgium Fries and sliced apples.

Simply cover with COLD water and add about a tablespoon of vinegar to the water,  keep in a cool or dark place, when you are ready to cook them drain the water out and add more cold water, then add salt to the water & cook.
