I was thinking it was where everything (all ingredience) are put in mixing bowl and mixed up together, not one at a time like most cake mixes. Could be seriously wrong.
A one step angel food cake mix combines the egg whites and the cake flour and sugar in one package. The older two step mixes had the egg whites and some of the sugar in one package and the cake flour and remainder of the sugar in a second package. By seperating the two packages one could beat the egg whites nicely without toughening up the flour portion because the flour was folded in after beating the whites. It is now difficult to find a major brand cake mix that has the seperate packages.
