Buy small Ruderbager's they are hard to cut. Peel and cube them 1" dice. Cover with cold water and bring to a boil when they are half way done I add half the amount of ruderbagers I am cooking with white potatoes and simmer until all is fork tender. I find the potatoes cut down on the bitterness, some people just add a little sugar. In another pan render 4 slices of thick bacon. Dice 2 lg yellow onions and carmalize in the bacon fat. Mash bagers and potatoes add a little milk if two thick add onions crispy bacon salt and pepper to taste give a good mix. Enjoy! We always have this at thanksgiving dinner.
