I've been in the foodservice industry for over 20 years. If you're buying a restaurant and you have no knowledge of proper food handling procedures you are setting yourself up for disaster. I've seen it thousands of times.Do yourself a favor. Hire an experienced chef and manager that you trust and stay out of the way. The quickest way to lose your shirt is owning a restaurant. There's a reason the majority of new restaurants close within the first year. It is not easy, even with experience.
