Do you know of any natural preservatives, or organic preservatives? I am looking for a natural preservative that does not contain probionic acid, for use in bread to prevent mould growth.
I don't know anything about probionic acid, but how about trying Cinnamon, salt or sugar.

As far as I know, organic bread tend to mold faster because most manufacturers take pride in not adding any preservatives to it. I don't think you can use Sugar, cinnamon or salt (which are all natural preservatives) in a large enough quantity to make any impact without making the bread totally inaudible.
I don't know if you are making bread for sale or for personal use, if it's for personal use how about making enough dough for a few loafs and freezing it then baking just a small loaf each day and eating it before it goes bad?
Another solution is storing the bread in the fridge and toasting a slice when you want to eat it.
Anyone care to explain the thumbs down I received in my first post? Sugar/salt/cinnamon is used to prevent mold growth in bread. Sheesh.
