Not a different species, just a breed of chicken selectively bred through the years to produce specific characteristics such as the soft feathers, black skin, bones and flesh. They are considered a gamebird which may account for their taste... it may also be because of their diet. If you go to feathersite make sure to look up the ayam cemani. It is a true black chicken. Everything about it is black: blood, skin, feathers, comb, legs, toes, internal organs... beautiful yet kinda creepy.
