I'm pretty sure that beaver is flavored by the tree it barks up on. Bad bark bad beaver. I always judged beaver by its tail. However on those cold chili nights it's good to warm the beaver and share a glass of wine. I would never share the beaver with friends although some do I have never met any. Lightly seasoned beaver is good but over seasoned would certainly be a little gamey and not good more than a day or two before it got old and you had to toss it out and get some new beaver. I hear they used to make hats out of beaver but I would never wear one in public now. I hope that your beaver turns out well. If you have any dam problems with trees just remember to leave it to beaver. and fish for wall-eye in the stream in June. I find a Cleaver works best for trimming. Use deet to Ward of mosquitoes and when boating stay out of the Eddies as the tide can turn quickly.

I'm fairly certain that fresh beaver is considered a year round treat.

THAT WHICH DOESN'T KILL YOU MAKES YOU STRONGER. Bull. Reality is, it will usually hurt like hell and leave you with a permanent limp.

Okay, I see by your topic that you'd like to make chili from the beaver meat you either have on hand or plan to have on hand.

I don't know where you live, but in some states or in certain areas I believe it is against the law to hunt and kill beavers - so please make sure of the rules and regulations BEFORE you begin your hunt.

Personally, I could never hunt and kill any animal so I guess I'd be forced to become a vegetarian if I had to catch my own instead of buy it in the store.

Properly prepped it's just delightful. I prefer it seasoned hot myself. The effort to prepare is well worth the reward at dinner. I wonder if beaver is served at the white house receptions it does have an international following.
