Try white wine or apple cider vinegar plus a little sugar.

Balsamic Vinegar?

I think you could successfully substitute a number of different vinegars, e.g. cider, balsamic etc. If using balsamic, I'd use a bit less sugar than the recipe states as it's sweeter than other vinegars.
