I have a small business based in California and using QuickBooks for my accounting related work. I am extremely mobile and hence I want to access the QuickBooks from anywhere I wish as well as I want my accounting staff to access it as well.

Yes, you are right in your observation that QuickBooks hosting can allow you to access the application from anywhere anytime. Also QuickBooks hosting allow multiuser collaboration so that all concerned users can access the application simultaneously and work on it. As regards service provider be sure that they provide backup to all QuickBooks files, host all versions and editions of QuickBooks and provide free troubleshooting and support.
