why tomato sauce will not freeze. I made a pasta sauce from canned plum tomatos, onions, mushrooms, pieces of eggplant, carrots and yellow squash. Will not freeze in 0 degree deep freeze?

Asked: Tomatos and acid

Any variety of tomatos that have the old fashioned acid kick and tomato taste. All seem to be sweet and not acidic nowadays. Even the heirlooms are mild and non acidic.
